Food recipe: Chicken-wing sauces

With football season near, it’s time to beef up your stable of chicken-wing sauces.

The routine is to make your wings as usual (fry in oil over medium heat for 20 minutes or until crispy, drain). Serve warm with sauce(s) on the side.

Here’s a start on some worthy flavors, but feel free to invent your own. Each recipe is enough for a dozen wings.

Traditional: 1/2 cup sour cream, 1 teaspoon white vinegar, 2 tablespoons prepared horseradish, or more, dash red pepper sauce.  

California: 1/4 cup soy sauce, 3 tablespoons hot red-pepper sauce, 3 tablespoons honey, 2 tablespoons peanut oil, 1 teaspoon minced garlic.

Texas: 1/4 cup pepper sauce, 1/4 cup melted butter, 1/4 cup chili sauce, 1 teaspoon chili powder.

Louisiana: 1/3 cup pepper sauce, 1/3 cup ketchup, 1/4 cup melted butter, 1/4 cup chili sauce, 2 teaspoons blend of chili powder, basil, cumin and garlic powder.

South Carolina: 1/4 cup beer, 3 tablespoons honey, 1 tablespoon melted butter, 1 tablespoon yellow mustard, red-pepper sauce to taste

Timid: 1/4 cup ketchup, 1 tablespoon peanut oil, 1 teaspoon minced garlic, 1 tablespoon (or more) grated prepared horseradish.
